KyBlue 652 #1 Posted March 9, 2009 Most of you know that I am switching from driving a truck to running a full time bbq catering and vending (fairs & Festivals) business. I recently had a bar owner approach me about doing stuff at his place at LEAST 5 days a week. While He wants to do a lunch menu, to pickup the business from the local offices and stuff during the day/Week...he mainly wants some bar type foods..You know finger food style.. Well I have talked with him about doing the usual stuff, Pulled POrk Sammies...Ribs (sold each like wings), BBQ Nacho's... and a couple things that I think are pretty original. Smoked Buffalo Wings...and Smoked (fullsize is the same) mini corn dogs... I did a trial run tonite, and I must say...Dayumn that was TASTEE!!! KyBlue 652 #3 Posted March 9, 2009 Ahh im a cheap SOB..used to use a Cut Potato to hold my pit temp probe but I use a Pop can now.. just so happened to be Dew today... might be beer next time..or pepsi or Ale 8-1 (local pop) and well delivery might be a bit pricey but I do hope to be going to Kellys to get a deck in month or two... might could bring ya some then if your not to terribly far away Share this post Link to post Share on other sites

And remember, Scott's a truck driver that's made regular runs to Mi. He just might know some back roads. Scott, how 'bout a hint regarding a location of the new gig. KyBlue 652 #16 Posted March 11, 2009 Jerrell, the can is holding my remote temp probe. I have some thermometers on order that will be permanently mounted but they are not here yet. I used to use potato's to hold the temp probe, but that gets pricey. That can will get used several times. Just put a bit of water in the bottom, and run the probe thru the holes poked...works great. As to the meat, I have a deal with a local store for case pricing. The wings and stuff came from wal mart thou. That'll be the LAST time too. Much easier to buy chicken wings and make your own buffalo wings...just have to do a bit of cutting.. Hey Jim ill be cookin more on the 21 or 22 if you wanna come give it a try... might put ya to work raising some rafters thou!!! Perry - IIRC Kelly is on the other side of the state from ya, and I Agree...detroit roads and traffic...leave alot to be desired. Kelly...might could work something out! KyBlue 652 #17 Posted March 11, 2009 Have smoker will travel...to the June show anyhow. I have talked with Wild Bill about selling, and the food at the show is provided by a church group. I wouldnt really feel right taking away from them. Plus Id have to spend the days selling and cooking...this way if I cook for some of ya'll in the evenings or even thru the day...it'll be just for us to enjoy. Thou donations to pay for the meat will be er required. Wish I could do it all for free, but im not that well off, and switching from driving over to BBQ isnt helping any! jerrell 1 #21 Posted March 15, 2009 :whistle: Sitting here reading the Sun paper and front page is a pic of "Smoking on The River" we have an annual BBQ cook off in Little Rock , chicken, ribs, and pork and beef, .. the pic made me think of your pic here, wish your circumstances were different and you could make one of these cook-offs, we have another one coming up in may in Magnolia AR, bigger than this one, the one in LR is for 50,000 and Magnolia is for a 100.000, lots of texans come to that one, maybe Bmone will be there.. the one in magnolia lasts for 3 days and it is huge.. have to go now and get me something to eat Oh yeah, had one of the judges there , said the judges was looking for something to startle the taste buds, one guy used mustard, vinagar, and honey in his sause and he walked away with 50.000.. do you use anything like that???
