The vises I have ordered have the same sort of grooves but much shallower. Not having ever used one I wouldn't know, but it seems like the deeper groove would be better for holding 3/4 stock.

The round stock should contact within the V-groove not the corners.  Nearly all vises can accommodate replacement or added jaws, most machine shops make their own for the work they do.  For 3/4" stock you can make a simple drawing or do the trig work.

@ebinmaine You should check the alignment of the spindle to the table so you can adjust that before mounting vises.  To do that, mount a dial indicator in the drill chuck and swing a large circle on the table.  Side to side is likely adjustable but front to back might take shims or machining to get it right.  Some call that traming.  I’m sure you can find videos on YouTube and a few of them might be correct.
