I suppose one could weld up the worn portions, then grind/file the welds back to hex.  That's assuming that the nut does not meed to be hardened.

Joe Papke, the Schnacke Guru   says I will need to harden these  hex nuts so that will also be done on this project.

 

  I know the right blacksmiths with the right furnaces!

You can only case harden cold rolled steel, but that isn't the best option for your part.  You should have purchased an alloy steel and hardened it.  One option

McMaster Carr stocks higher carbon steel hex that could be hardened.  Won't be tool steel hard, but it can probably get into the 40's on the Rockwell C scale.
