Sushi has become a global phenomenon over the past 30 years or so after struggling to find a foothold in the west in the beginning. Raw fish didn’t initially sound appetizing to all cultures but we eventually realized that we were wrong and now we can’t get enough of it. Beap52 1,390 #3 Posted June 17 Kinilaw na Isda (Philippine dish with fish (isda) that's in a mixture of spices, vinegar, cucumbers, onions and raw fish plus other ingredients I don't remember.) I was introduced to it in mid 1990's when our office had a party. One of the staff brought in the big bowl of kinilaw of which I had never seen before. He assured me that the tuna wasn't cooked with heat but that it was ""chemically cooked". It's a really tasty and because it was expensive (for our Philippino staff) only for special occasions. It became one of my favorites. As a side note, Asian countries have several varieties of rice. When one goes to the store or city market there will likely be ten or 15 varieties. One evening I made what mom served us when we had rice--that was a pat of butter, warm milk (cream is even better) cinnamon and brown sugar. I thought our Pilipino cook was going to gag! I suppose that combination on rice to her was like putting in on boiled potatoes to me. One of my favorite deserts was sticky rice and mango. A rice that sticks together with slices of mango, sweeten condensed milk some other stuff with some kind of crunchies on top. This past weekend, we drove to Houston Texas to attend a memorial service for one of our missionary friends. 8ntruck 7,771 #5 Posted June 18 I ran across some pickled baby octopus in Amsterdam. Being a guest, I was polite and tried it. I classed it as salty, acidic rubber bands. Now the smoked eel sandwiches there were pretty good. Served on a hoagie type roll with hot mustard. Treepep 678 #6 Posted June 18 Like, well darn near everything. It is about the quality. I was raised in Nebraska. Fish is... old, frozen and terrible at the grocery store. Fresh walleye, perch, catfish is pretty okay. I always hated fish because it has an odor. fresh or sushi grade does not. Perspective...I had fresh caught tuna tartare on a fishing excursion of the coast of NC. Amazing! cilantro, onions, acid, salt white pepper, garlic, fresh caught 3/8 diced tuna. splash of Chardonnay.
