oliver2-44 10,517 #1 Posted May 12 So wife and I took the Rv to Goliad Texas State Park for a few days. Our Rv neighbors were from Sheboygan Wisconsin. They have been wintering in lower South Texas for about 20 years. Returning to Wisconsin later than normal this year. We spent a couple of evenings with them around our camp fire. Really nice couple. So @WHX?? and @Achto have gotten a lot of kidding about Cheese Curds. To be truthful I’ve had no idea what they actually are. @SylvanLakeWHNot a thing here in Texas. So I had to ask our new friends if Cheese Curds were like a type of cheese puff. They had a good laugh and explained there more like rubbery/chewy/squeaky 1” chunks cut off the top of the cheese when it’s made. I think I’ll stick to Cheetos for my cheese treats. 5

oliver2-44 10,517 #4 Posted May 12 Almost forgot to add, I spotted this poor neglected Wheelhorse when we were in town. GT2500 Anniversary Special 8 speed. It was under a lean to roof attached to an old garage. Looks like it hasn’t moved in a few years. No truck or trailer and 4 hours from home. Love the wooden seat mount. Would be interesting to know how it got down here this far south. It’s about 10+ hours to where a dealer would have been in NE Texas. 6

Tell @Achto and @WHX?? you got a line on a round hood or two - NOS - barn find, southern Texas... only catch is the owner needs curds... fast... They'll load up, grab a cooler of curds and be on their way.... Dan stays in the truck guarding the curds. This guy does the actual horse thievin'
Pullstart 65,442 #7 Posted May 12 What’s not to love about the only food in the world that you are actually supposed to deep fry when frozen!?!? 2

If you like cheese, you'll like curds. Unlike some cheese that is best aged, curds are best fresh. Good chilled, but best if never chilled & at room temp ( never chilled at room temp is when they squeak on your teeth when you eat them ) The local cheese house makes their curds every Thursday, so that is the day that I will stop to buy some. To up the ante you can also dip them in breading and then deep fry them. Oooy, Gooy, crunchy goodness. NOTE: the curds must be frozen before breading and deep frying, other wise the cheese melts out & you are left empty breading balls. These are soooo good. My favorite is deep fried pepper jack curds. 953 nut 58,940 #9 Posted May 12 Cheese curds were a part of my childhood. When the transition from farmers sending milk cans to the dairy processing plant to bulk tanks being pumped into tankers the processors began to pay less for milk from cans. The Dairyman's league set up a cheese factory that accepted milk from cans so most small farms brought milk to them. When you dropped off the milk they always had bowls of curds on the counter, they were so gooood. Thanks for giving me this trip down memory lane. 3
Handy Don 13,559 #10 Posted May 12 While on an assignment in Racine, WI I got introduced to cheese curds, Kringle, and the Packers-Bears rivalry. I had a great time! 1
Bill D 2,185 #11 Posted May 12 I love cheese curds. Local market has them. Definitely a great treat. If you've never tried them you don't know what you're missing. 1
8ntruck 7,570 #12 Posted May 12 We like them broiled. Or nuke them in a microwave on a Triscuts cracker. 1
